Bone broth is something I make on a regular basis. Very popular amongst the Paleo community, its therapeutic and healing properties have been proven more than once. Very rich in minerals and in precious amino acids, it helps protect and heal the gut, it reduces inflammation and may help with joint pain and with the immune system. The gelatine and collagen content is also very good for the skin, making it glow from the inside out. It's also the perfect afternoon snack as the protein and fat content will make you feel full and satisfied.
There's something so comforting about making and eating soup at home! I hope you enjoy this version of a mushroom soup, made with a very simple shiitake broth. I use Kombu seaweed in the broth, as seaweed vegetables is a great source of iodine and vitamin C, as well as having anti-cancer and antioxidant benefits.
